Chhole : Soak Chic-peas (kabooli chane) overnight. Next Morning drain it and steam it in a pressure cooker adding some water and salt, keep on pressure for 25 minutes. Make onion, tomato, garlic-ginger-chili paste seprately. Boil some potatoes, peel it and make medium sized pieces. In kadhai, heat oil, add garlic-ginger-chili paste first, when it turns brown add onion paste and then tomato puree to oil. Cook it for 3-4 mins adding some garam masala or chhole masala. Keep lid on kadhai. Then add cooked chic-peas, add water if you need some gravy, then chopped potatoes and more garam or chhole masala, add salt as per taste. Keep lid and steam for 3-4 mins. When done add some choppd corrinder while serving.
