Stuffed mushroom appetizer 16-20 large button mushrooms 1/2 cup chooped fresh spinach(frozen will do too- thaw it completely) Approx 1/2 cup ricotta cheese 2 tablespoon grated cheddar cheese 1 teaspoon chilli powder/cayenne/ancho chilli powder Salt to taste Bread crumbs Wash the mushrooms thoroughly. Remove the stems. Boil the caps in lightly salted water for 5 minutes. Chop the stems and mix with the spinach, both the cheeses, chilli powder and salt to taste. Mircowave on high for two minutes, stirring at 1 minute. Drain the mushroom caps, place a dollop of cheese-spinach mixture in each mushroom. Top with more grated cheddar cheese and some bread crumbs. You can prepare the stuffing and boil the mushrooms ahead of time. Cook in 375 oven for about 10 minute or until the cheese stuffing is cooked. Serve immediately.
