Simple & Tasty Eggplants (Brinjals) ---------------------------------------------------- Generally people do not prefer brinjals...vaangyaachi bhaaji barech janaannaa avaDat naahi....try out this easy and tasty recipe which is good for 2 people. 1. 3 large eggplants (the ones you get in US are pretty huge ones) 2. Oil - 2 tblspn 3. Mustard seeds - 1 tsp 4. Aesofotida (hing) - a pinch 5. Turmeric powder - 1 tsp 6. Green chillies / tikhat - as per taste 7. Cilantro (kothimbeer) - optional 8. Salt per taste Method: 1. Cut the eggplants into thin slices (first cut the eggplant lengthwise and then chop it into fine slices) 2. Heat oil in the kadhai 3. When hot enough add the hing, mohri, turmeric,chillies 4. Add the eggplant slices and mix well. Cover with lid. 5. After 2 minutes remove lid and stir well. this time do not put on lid. 6. Keep mixing every 2 -3 minutes. 7. When it becomes soft add the salt and kothimbeer. Serve hot with rotis, pita or bread! Tastes yummy. The trick is to make as think slices as possible and a little bit of extra oil. Enjoy!
