I'm looking for a kolhapuri mutton recipe and also
a recipe for misaL.
I have tried some that are available on the web but there's no 'maza' in them. I want someone's mom or grand mom or aunt's recipe.
PLEASE !!!!!!!!!

yep, u say u tried some stuff from the net. i tried it too & this one came out wonderfully. i hope u have it 4 ur weekend....

u need:

2 TBSP OIL
4 ONIONS SLICED
2 1/2 TSP CRUSHED GARLIC
1 TSP CRUSHED GINGER
2 1/2 TSP CHILLI PASTE
1 TSP CORIANDER POWDER
1/2 TSP TURMERIC POWDER
1 KG BONELESS MUTTON CUT INTO 1 1/2 INCH CUBES
4 RIPE TOMATOES CHOPPED
1 TSP SALT
1 1/2 CUPS WATER
3 WHOLE DRIED CHILLIES FRIED IN OIL TO GARNISH
VERY FINELY SHREDDED GINGER TO GARNISH

MASALA :

1 1/2 tbsp coriander seeds
2 blades mace
4 cloves
2 tsp black peppercorn
8 cm. cinnamon stick
3 dried red chillies broken
1 cup freshly grated coconut

Preparation :

Prepare the masala by putting all ingredients except the coconut in a pan and roast over low fire till they smell fragrant. Then grind to a powder after cooling. Add the coconut and grind to mix well. Heat oil and saute onions till golden brown. Add the ginger,garlic and chilli paste and cook for few mins. then add the tumeric and coriander powder and saute for a few mins. Now add the meat and saute till brown all over. Put in the masala paste and saute for 15 mins. Then add the tomatoes and salt. Add water and cook over low heat stirring from time to time untill the meat is tender. Garnish with fried chillies and ginger and serve with white boiled rice.

Tip: 4 Tomato aivagee 1tomato ani 1/2cup dahi(plain curd) ghalun bagh...chhan lagta ani garam masalyacha jhanka hi lagat nahi....

hey try this recipe for mutton

mutton la 1/2 cup dahi, halad tikhat ani meeth lavun theva
masala 1:
ginger, garlic, 1 chota kanda, lavang, dalchini, mirey, badi velchi, star-anise, 'dagadphool' if u get it, jaaypatri, dhane, badishep, shaha jeere.
masala 2;
coconut, maybe wet or dry, tavyawar partun ghyacha , agadi gulabi, kanda, ubha chirun partun ghyacha, ani khuskhus bhajun.

telavar tamalpatra phodnis takun, kanda chirun taka, ekdun chaan gulabi zala ki, pahila vatan taka, mast ginger- garlis vaas sutla ki mutton taka, chaan partun ghya, ani let it cook, as usual. shijlyawar. tyat dusra masala, thodya panyat ghalun. hava tasa daat rassa kara.

hya barobar, try this vade ;


i kilo jowar cha peetha sathi
2 tbs chana daal, 1 tbs udad daal ratri bhijat ghala. next morning, hidaal tyat thodi halad, 2-4 hirvya mircha ani 1/2 inch ginger ghalun, vatun ghya
he mishran, jwarichya pithat ghalun, komat panyani peeth bhijvun theva.
this has to be atleast 6 hrs in advance
adhi akrun frige madhe thevta yeta, kelya kelya nako. 6 hrs outside.

then as usual, vade thapun, talun kada.
