The "light" Chinese soy sauce is lighter in color, tends not to color the food, and is used as the general all-purpose marinade and seasoning in most dishes. The "dark" is darker and redder in color, "sweeter" in taste, and used when you do want to bring the color in the food . It is used somewhat less often, usually in glazed stir-fry sauces. You can tell the difference between light and dark soy sauce by shaking a bottle and looking at the foam. "Light" soys produce a lighter tan foam. "Dark" soys produce a noticeably red foam.

माझ्यामते पापडखार हा एक वेगळाच क्षार आहे, हिंग आणि मीठ एकत्र करून तो करत नाहीत. त्याला वेगळा वास येतो आणि चुकूनसुद्धा त्याची चव घेवू नये. जीभ जळजळते. तो फ़क्त पापडातच आणि ते हलके होण्यासाठी वापरतात. पापड हलके होण्यासाठी केळाच्या काल्याचे पाणे, हाडमोडीचे पाणीही वपरतात.
लोणार ईथल्या खार्‍या पाण्याचे तळ्यातील क्षार पापडखार म्हणून विकायच्या प्रयत्न झाला होता. (अर्थातच अयशस्वी).
गव्हाच्या लाह्या फ़ोडताना तो वापरतात. पूरणात तो वापरत असावेत असे मला तरी वाटत नाही.
गुजराथमधे तुरीची डाळ वापरतात, पूरणासाठी, त्या पोळ्या हलक्या होतात. तश्या ज्याना चणाडाळ सोसत नाही त्यानी मूगडाळ किंवा मसूर डाळीचे पूरण करायला हरकत नाही. त्याही हलक्या होतात. या दोन्ही डाळी मात्र फ़ार चोळून धुवाव्यात, शिजवण्यापूर्वी. वास पण जरा वेगळा येतो, पण तो जास्त वेलची व जायफ़ळ वापरून घालवता येतो.
चणाडाळीच्या पुरणात तेल व थोडा चुना घालतात.

साधारण पणे याचा अर्थ मसाल्याचे पदार्थ न वाटता किंवा त्याची पूड न करता तसेच आख्खे ठेवणे, जसे लवंगा, मिरी, मसाल्याची वेलची, वगैरे.

वरचा खुलासा बरोबर आहे, यासाठी खडा मसाला असा शब्दपण वापरला जातो. हे मसाले टाकण्या आधी ते ओलसर असू नयेत व तेल वा तूप पुर्ण तापलेले असावे.

सोलापुरला जो थालीपीठ सदृष्य प्रकार करतात त्याला धपाटा म्हणतात. पण तो बहुडा ऊरलेल्या वरणात किंवा आमटीत पीठ घालून करतात. त्याला भाजणी लागत नाही. करून बघण्यासारखा प्रकार आहे हा, फ़क्त एक लक्षात ठेवायचे की तूरीच्या डाळीचे वरण असेल तर त्याचे धपाटे करताना कणीक अवश्य घालावी नाहीतर ते फ़ूटतात. ज्वारीचे किंवा तांदळाचे पीठ प्रामुख्याने वापरावे. आवडीप्रमाणे इतर मसाले घालावेत. डाळीत चिंच आमसुले वैगरे असतील तर ती काढून टाकावीत.

पंजाबमध्ये पण कच्चाच मसाला वापरतात. पण एक गोष्ट लक्षात घ्यायला हवी की सोलापूर आणि पंजाबमध्ये हवा कोरडी आहे. आपल्याला मसाले न भाजता वापरायचे असतील तर ते किमान नीट वाळवून घ्यायला हवेत. तरच त्याला स्वाद येतो.

Helath point of view "never use same oil"

what is the difference in hotel n home , who would expect the things to be healthy if eaten outside.

you always take risk if eating outside.

i dont say that one can fall sick but when you have option to take care of health and doing the things at home per your wish then why not??

aani its good to avoid over-heated oil in vegetables, chances of trans-fat is more in such oil per my mom who happens t be nutritionalist.

all disease like high cholsterol, diabetis root cause is "trans-fat", lipid increase and these are predominantly the by-product of such over heated, over fried oily stuff.

Have you noticed road -side vada pav gadiche tel compelte brown asate and the fact it is full of 80% trans-fat( theoritically proved).
